Ingredients - makes 15 waffles
Dry Ingredients:
● 3 cups - Almond Flour● ½ cup - Tapioca Starch● 2 Tbsp - Coconut Flour● 1 ½ tsp - Ground Cinnamon● Pinch of Sea Salt● 2 Tbsp - Baking Powder
Wet Ingredients:
● 4 Eggs, Yolks and Whites Separate (Available at Lifepointe Chiropractic and Wellness Center)● 3 tsp - Pure Vanilla Extract● 2 Apples, Peeled and Grated● 1 cup - Coconut Milk● 4 Tbsp - Coconut Oil, Melted (Available at Lifepointe Chiropractic and Wellness Center)● Toppings: Fresh Fruit, Pure Maple Syrup (Available at Lifepointe Chiropractic and Wellness Center)
1. Melt coconut oil.
2. Combine the dry ingredients together.
3. In a separate bowl, combine together the egg yolks, vanilla, coconut milk, apple, and melted coconut oil. Mix in with the dry ingredients.
4. With a mixer, whip the egg whites until frothy.
5. Fold the egg whites into the batter gently, just enough to mix.
6. Preheat the waffle iron. Follow directions for the waffle iron to cook.
