Braised Cabbage and Apples


● 1 tsp - Coconut Oil (Available at Lifepointe Chiropractic and Wellness Center)● 1 - Large Leek, chopped● 1 tsp - Minced Garlic● 1 tsp - Dried Thyme● Sea Salt● Black Pepper● 3 - Apples (skin on), cored and sliced into thin wedges● ½ cup - Dried Cherries● 1 ½ cup - Vegetable or Chicken Broth● 1 - Head of Cabbage, loosely chopped

1. Preheat the oven to 375 degrees.

2. Heat coconut oil over medium-low heat. Add leeks and saute for 3-5 minutes until softened. Stir in garlic, thyme, salt, and pepper to taste and saute for 1 more minute.

3. Add the apples, cherries, and broth and stir to combine. Transfer to a large rectangle baking dish. Fold in the cabbage, cover the dish, and place in the oven for 40 minutes.
