● 2 Fried Eggs (Available at Lifepointe Chiropractic and Wellness Center)● 1 Avocado● 2 Tbsp - Coconut Oil (Available at Lifepointe Chiropractic and Wellness Center)● ½ Small Red Onion, Finely Chopped● 4 cups - Cauliflower Rice● Sea Salt and Pepper to taste
PICO DE GALLO INGREDIENTS:● ½ Small Red Onion, Chopped● ½ cup - Chopped Fresh Cilantro● 1 - Jalapeno, Chopped● Juice of 1 lime● Salt and Pepper to Taste
1. Put ½ the red onion in a skillet with the coconut oil and cook until soft. Add cauliflower rice and cook until tender. Season with salt and pepper and set aside.
2. To make pico de gallo, combine all the ingredients and mix well. Set aside.
3. Fry the eggs in a skillet.
4. Serve cauliflower rice in a bowl, topped with fried egg, pico de gallo, and sliced avocado.
