Butternut Squash Casserole


● 1 - Butternut Squash, peeled, halved, seeded, and thinly sliced● 1 - Onion, chopped● 1/3 cup - Organic Apple Juice● 2 Tbsp - Coconut Oil (Available at Lifepointe Chiropractic and Wellness Center)● 2 Tbsp - Local Raw Honey (Available at Lifepointe Chiropractic and Wellness Center)● ¼ cup - Shelled Pistachios, crushed● ¼ tsp - Cumin Powder● ¼ tsp - Turmeric Powder

1. Preheat the oven to 350 degrees. Melt coconut oil in a glass dish in the oven. Place squash in a casserole dish and cover with onions. Sprinkle spices on top.

2. In a small bowl, whisk together juice, honey, coconut oil, and pistachios. Pour over squash and bake until tender, about 1 hour.
